  • 1 cup shredded cheese (Colby Jack, cheddar, or Monterey Jack)

Instructions

  • Marinate the Chicken:
    • In a small bowl, whisk together Dijon mustard, honey, mayonnaise, and lemon juice.
    • Place chicken breasts in a resealable bag, pour in the marinade, and coat evenly. Refrigerate for at least 30 minutes or overnight for better flavor.
  • Prepare the Chicken:
    • Preheat oven to 350°F (175°C). Lightly grease a baking dish.
    • Remove chicken from the marinade and discard remaining marinade.
    • Season chicken with salt, pepper, and paprika.
    • Heat olive oil in a skillet over medium heat. Sear chicken for 2-3 minutes on each side to lock in juices.
  • Assemble the Dish:
    • Transfer seared chicken to the baking dish.
  • Make the Toppings:
    • In the same skillet, melt butter and sauté mushrooms until golden.
    • Spread mushrooms over chicken, add bacon, and sprinkle cheese on top.
  • Bake:
    • Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted.
