  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 450 g granulated sugar (divided)
  • 600 ml milk (whole or lactose-free)
  • 4 egg yolks
  • 3 tbsp cornstarch
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Prepare the Apples: Wash, peel, core, and slice the apples thinly. Mix with 150 g of sugar and 1 tsp salt; let sit for 15 minutes.
  2. Cook the Apples: In a saucepan over medium heat, cook apple slices until slightly tender (about 10 minutes). Cool slightly.
  3. Make the Vanilla Custard: Whisk egg yolks, remaining sugar, cornstarch, and salt in a bowl. Heat milk until just boiling; gradually whisk into the egg mixture. Return to heat and cook until thickened (5-7 minutes). Stir in vanilla bean paste.
  4. Assemble: Layer apple slices at the bottom of a baking mold followed by custard; repeat until all ingredients are used.
  5. Bake: Preheat oven to 180°C (350°F) and bake for 30-40 minutes until golden brown. Cool before serving.
