  • 2-3 tablespoons Jamaican Green Seasoning
  • 2 tablespoons Jamaican curry powder
  • 1 can (14 oz) full-fat coconut milk
  • 2 medium russet potatoes (peeled and cubed)
  • 2 medium carrots (peeled and chopped)
  • 1 medium bell pepper (chopped)
  • 3 garlic cloves (minced)
  • 1-3 scotch bonnet peppers (adjust to taste)
  • Sea salt and black pepper to taste

Instructions

  1. Marinate chicken with Jamaican Green Seasoning, curry powder, sea salt, smoked paprika, and browning sauce for at least 30 minutes.
  2. Sauté garlic, ginger, bell pepper, carrots, and thyme in olive oil until fragrant.
  3. Add marinated chicken to the pot; brown on all sides.
  4. Stir in potatoes and scotch bonnet peppers.
  5. Pour in coconut milk and chicken stock; add brown sugar and seasonings.
