3/4 cup unsalted butter, melted
1/4 cup granulated sugar
1/2 cup golden brown sugar
2 eggs
1 tsp vanilla extract
4 ripe bananas
1 3/4 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup semisweet chocolate chips
1 cup walnuts, chopped
Instructions
In a large mixing bowl, add granulated sugar, brown sugar, and melted butter. Use an electric hand mixer to combine everything for about 1 minute on medium-low speed.
Add vanilla extract and eggs, mixing on medium speed.
In a separate bowl, mash the ripe bananas, then add them to the muffin batter.
Sift in the dry ingredients: all-purpose flour, baking soda, and salt. Mix them into the banana muffin batter.
Fold in the chopped walnuts and semisweet chocolate chips using a spatula.
Line a muffin tin with cupcake liners and fill each muffin cup full. The recipe makes about 12-13 muffins.
Top the muffins with extra chocolate chips and bake at 350°F for 20-24 minutes.
