Ingredients

  • 3/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 cup golden brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 4 ripe bananas
  • 1 3/4 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semisweet chocolate chips

 

  • 1 cup walnuts, chopped

Instructions

  • In a large mixing bowl, add granulated sugar, brown sugar, and melted butter. Use an electric hand mixer to combine everything for about 1 minute on medium-low speed.
  • Add vanilla extract and eggs, mixing on medium speed.
  • In a separate bowl, mash the ripe bananas, then add them to the muffin batter.
  • Sift in the dry ingredients: all-purpose flour, baking soda, and salt. Mix them into the banana muffin batter.
  • Fold in the chopped walnuts and semisweet chocolate chips using a spatula.
  • Line a muffin tin with cupcake liners and fill each muffin cup full. The recipe makes about 12-13 muffins.

 

  • Top the muffins with extra chocolate chips and bake at 350°F for 20-24 minutes.

Notes

  • Sift the dry ingredients – This ensures even mixing and prevents clumps of flour in your muffins.
  • Ripen the bananas yourself – Place unripe bananas on a baking sheet and bake for 15 minutes at 350°F. Let them cool before using.
  • Use cupcake liners – This prevents a mess from melted chocolate and makes storage easier.
