Ingredients

Scale
  • 6 medium apples (peeled, cored, and diced)
  • 1 lemon (zested and juiced)
  • 2 1/2 cups water
  • 1 cup white granulated sugar
  • 1/2 cup light brown sugar
  • 1/3 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • Pinch all-spice (optional)
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter (optional)

Instructions

  1. Prepare the apples by washing, peeling, coring, and chopping them into 1-inch chunks.
  2. In a large bowl, mix the chopped apples with lemon juice and zest to coat evenly.
  3. In a medium saucepan over medium heat, combine water, sugars, spices, cornstarch, and salt. Stir until dissolved.
  4. Bring the mixture to a boil while stirring frequently for about 2-3 minutes until slightly thickened.
  5. Add the apple mixture to the saucepan. Reduce heat to low and cover; simmer for 6-8 minutes until apples soften but aren’t mushy.
  6. If needed, thicken further by mixing additional cornstarch with water and adding it to the filling.
  7. Remove from heat and stir in butter if desired for richness.
  8. Let cool before transferring to an airtight container for storage.
