  • 1 1/4 cups buttermilk
  • 1 cup blueberries (for batter)
  • 3 cups blueberries (fresh or frozen)
  • 1/2 cup granulated sugar (for filling)
  • 1 tbsp lemon juice
  • 2 tsp cornstarch
  • 2 tbsp water
  • 1 cup unsalted butter (for frosting)
  • 1/2 cup cream cheese
  • 5 cups powdered sugar
  • 1/4 cup blueberry puree
  • Fresh blueberries (for garnish)
  • Mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one bowl, mix flour, baking powder, baking soda, and salt; set aside.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs and vanilla; mix well.
  4. Stir in buttermilk until combined.
  5. Gradually add the dry ingredients to the wet mixture without overmixing.
  6. Gently fold in the blueberries.
  7. Pour batter into prepared pan and bake for about 40 minutes or until a toothpick comes out clean.
  8. Allow to cool before frosting with blueberry cream cheese frosting.
