  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2/3 cup cold butter (cut into cubes)
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 4 eggs
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese (softened)
  • 1 and 2/3 cups blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a springform pan with parchment paper.
  2. In a large bowl, mix flour, baking powder, salt, sugars, and lemon zest. Add cold butter until crumbly.
  3. Stir in eggs and vanilla until just combined; press two-thirds of the mixture into the pan.
  4. For the filling, blend mascarpone, cream cheese, sugar, corn starch, and eggs until smooth.
  5. Pour half of the filling over the crust; top with blueberries and remaining filling. Sprinkle with leftover crumbs.
  6. Bake for 65-75 minutes until golden brown; cool before serving.
