  • 250 g digestive or graham crackers
  • 75 g butter
  • 300 g fresh blueberries
  • 800 g full-fat cream cheese
  • 260 g granulated sugar
  • 4 large eggs
  • 200 g sour cream

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Crush the crackers and mix with melted butter and sugar. Press into the bottom of a springform pan.
  3. Toss blueberries with sugar, flour, and lemon juice; set aside.
  4. Beat cream cheese until smooth, add sugar gradually, then mix in sour cream, cornstarch, vanilla extract, and eggs one at a time.
  5. Layer half of the cheesecake filling over the crust, top with half of the blueberries, then repeat with remaining filling and blueberries.
  6. Bake for about 85 minutes until the edges are set but the center is slightly jiggly.
  7. Cool at room temperature before refrigerating for at least four hours.
