  • 1 puff pastry sheet
  • 2 1/2 cups fresh blueberries
  • 1 lemon (zested)
  • 5 teaspoons sugar (divided)
  • 4 ounces cream cheese
  • 1 teaspoon cornstarch
  • 1 egg (divided)

Instructions

  1. Thaw puff pastry according to package directions.
  2. Preheat oven to 400°F (200°C).
  3. Roll out the thawed puff pastry into a circle about 12 inches in diameter on a floured surface.
  4. In a bowl, mix blueberries with 3 teaspoons of sugar, cornstarch, and juice from half of the lemon.
  5. In another bowl, combine cream cheese, 2 teaspoons of sugar, egg yolk, and half of the lemon zest until smooth.
  6. Spread the cream cheese mixture over the dough, leaving a 2-inch border. Top with blueberry filling.
  7. Fold edges of the dough over the filling and brush exposed dough with egg white.
  8. Bake on a parchment-lined baking sheet for about 30 minutes until golden brown. Cool for at least 10 minutes before serving.
