  • 32-ounce bag frozen tater tots
  • 1 pound hot bulk pork sausage
  • 1 medium onion, diced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 ½ cups sharp cheddar cheese, grated
  • 1 ½ cups pepper Jack cheese, grated
  • 8 large eggs
  • 2 cups half-and-half
  • 4 ounces diced green chilies
  • Spices: parsley, paprika, ground mustard, oregano, salt, and pepper

Instructions

  1. Preheat the oven to 350°F and spray a 9"x13" baking dish with non-stick spray.
  2. In a large skillet over medium-high heat, cook the sausage with onions and bell peppers until browned. Stir in minced garlic for the last 30 seconds of cooking. Drain excess grease.
  3. In a mixing bowl, whisk together eggs, half-and-half, green chilies, and spices.
  4. Layer half of the tater tots in the baking dish followed by the sausage mixture and half of each cheese. Repeat layers.
  5. Pour egg mixture evenly over the top and add remaining tater tots.
  6. Bake uncovered for 70–80 minutes until eggs are set. Add remaining cheese and bake for an additional 5–10 minutes until melted.
