  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider or white vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • Optional: Turbinado sugar for topping

Instructions

  1. Prepare the Brown Butter Crust: Melt cold unsalted butter in a saucepan over medium heat until golden brown and nutty. Cool slightly, then mix with flour and salt. Add water and vinegar until just moistened.
  2. Chill the Dough: Form dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the Filling: In a bowl, gently combine sliced peaches and strawberries with sugar, cornstarch, lemon juice, zest, and salt.
  4. Roll Out the Dough: Preheat oven to 375°F (190°C). Roll out chilled dough into two circles.
  5. Assemble the Pie: Place one circle in the pie dish, fill with fruit mixture, cover with second circle, seal edges.
  6. Bake: Sprinkle with Turbinado sugar if desired. Bake for about 70 minutes until golden brown.
