  • 1 ring (13.5 ounces) andouille sausage, sliced
  • 1 large onion, diced
  • ½ cup diced celery
  • ½ red bell pepper, diced
  • 2 teaspoons garlic, minced
  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy cream
  • 1 cup shredded cheddar cheese
  • Cajun seasoning and other spices

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add the sliced sausage and cook until browned (about 5 minutes). Stir in onion, celery, bell pepper, and garlic; sauté until softened (3–4 minutes).
  2. Sprinkle in Cajun seasoning, salt, black pepper, paprika, and cayenne; stir for about 1 minute.
  3. Pour in chicken broth and add cubed potatoes. Bring to a boil.
  4. Reduce heat to low, cover, and simmer until potatoes are tender (30 minutes).
  5. Stir in heavy cream and gradually add cheddar cheese until melted.
  6. Serve hot, garnished with chopped parsley.
