  • 1/2 cup light brown sugar
  • 5 large eggs
  • 1/4 tsp salt
  • 1/3 cup whole milk
  • 3 tbsp vegetable oil
  • 2 tsp vanilla
  • 100g milk caramel chocolate
  • 1/3 cup water
  • 1/4 cup brown sugar
  • 3 cups heavy cream, chilled and divided
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1/2 cup heavy cream
  • 1/2 cup flour
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1/4 tsp baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease baking pans.
  2. Whisk together brown sugar, egg yolks, salt, milk, oil, and vanilla until smooth. In another bowl, sift flour, cornstarch, salt, and baking powder. Gradually combine dry ingredients with the wet mixture.
  3. In a separate bowl, beat egg whites to soft peaks; gradually add brown sugar until stiff peaks form. Gently fold into batter.
  4. Pour batter into pans and bake for 25-30 minutes until golden brown. Cool completely.
  5. Make ganache by combining brown sugar and water over medium heat; add chopped chocolate until smooth.
  6. Whip heavy cream with vanilla and salt until soft peaks form; reserve some for decoration.
  7. Assemble by layering cake, ganache, and whipped cream frosting.
