  • 1 ½ tablespoons olive oil
  • 4 large sweet onions (thinly sliced)
  • 2 medium leeks (sliced)
  • 1 teaspoon salt (divided)
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1/3 cup dry white wine
  • 4 cups vegetable broth
  • 2 cups milk

Instructions

  1. Preheat your oven to 350°F. Roast the garlic by wrapping it in foil with olive oil and baking for 1 hour.
  2. In a large pot, heat the remaining olive oil over medium heat and sauté onions and leeks until soft (about 30 minutes). Add salt and thyme; continue cooking until golden brown (another 30 minutes).
  3. Stir in flour, then add white wine and vegetable broth; bring to a boil. Reduce heat and simmer for about 30 minutes.
  4. Blend the mixture with roasted garlic until smooth, then return it to the pot.
  5. Stir in milk and simmer for an additional 8 minutes before serving.
