Ingredients

1 teaspoon olive oil

2 cloves garlic, minced

1 ½ cups low-sodium chicken broth

1 cup milk

1 (20-ounce) package cheese tortellini

3 cups fresh broccoli, roughly chopped

1 (8-ounce) package cream cheese

½ cup grated Parmesan cheese

2 cups cooked chicken, diced

Salt and black pepper, to taste

Instructions

  1. Heat olive oil over medium-high heat in a large pot. Add minced garlic and cook for 30 seconds, until fragrant.
  2. Add chicken broth and milk to the pot and bring to a boil.
  3. Stir in the cheese tortellini and cook for 2 minutes.
  4. Add the broccoli and continue cooking for about 3 minutes, stirring occasionally, until the tortellini is tender and the broccoli is bright green.
  5. Lower the heat and stir in the cream cheese and Parmesan cheese until fully melted and combined.
  6. Add the cooked chicken and stir until heated through.
  7. Season with salt and black pepper to taste.
  8. Serve hot, topped with extra Parmesan cheese if desired.

Notes

  • If using frozen tortellini, they may take an extra 1–2 minutes to cook. Check the package instructions for exact cooking times.
  • For a richer flavor, substitute heavy cream for milk.
