  • 1 cup mascarpone cheese (room temperature)
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed espresso or coffee (cooled)
  • 3 tbsp amaretto liqueur
  • 7 oz ladyfinger cookies (savoiardi)
  • 1 ½ cups cherry preserves
  • Fresh cherries (for garnish)

Instructions

  1. In a mixing bowl, whip heavy cream until soft peaks form. Add mascarpone cheese, powdered sugar, and vanilla extract; whip until smooth and fluffy.
  2. In a shallow dish, combine cooled espresso with amaretto.
  3. Quickly dip each ladyfinger into the espresso mixture and layer them in a 9×9-inch dish.
  4. Spread half the mascarpone mixture over the ladyfingers, followed by half the cherry preserves and fresh cherry halves.
  5. Repeat the layers with remaining ingredients.
  6. Cover and refrigerate for at least six hours or overnight.
  7. Before serving, dust with cocoa powder and garnish with fresh cherries.
