  • 1/2 cup plain 2% Greek yogurt (or vanilla)
  • 1/2 cup unsweetened almond milk
  • 1 tbsp real maple syrup (or honey/stevia)
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/3 cup blueberries
  • 1/3 cup strawberries
  • 1/3 cup raspberries

Instructions

  1. In a medium mixing bowl, whisk together chia seeds, Greek yogurt, almond milk, maple syrup, vanilla extract, and salt until well combined.
  2. Divide the mixture evenly into two parfait dishes or small mason jars.
  3. Cover and refrigerate for at least 2 hours or overnight to allow the chia seeds to expand and the mixture to set.
  4. Before serving, stir the mixture gently and top with fresh berries. Optionally drizzle with extra maple syrup.
