  • 2 large chicken breasts (or 4 medium/small)
  • 1 Tbsp olive oil
  • 3 Tbsp butter
  • 4 Tbsp all-purpose flour
  • 2 cups chicken stock
  • 1/2 cup water
  • 1/4 cup heavy cream (Optional!!)
  • Kosher salt
  • Black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Instant Pot Mashed Potatoes (for serving)

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat and cook the chicken for about 5 minutes on each side until fully cooked (165℉). Set aside.
  2. In a small bowl, combine flour, onion powder, garlic powder, salt, and pepper. In the same skillet, melt butter and add chicken base. Stir in the flour mixture to create a roux.
  3. Gradually whisk in chicken stock and water until the gravy thickens.
  4. Shred the chicken if desired and stir it back into the gravy; simmer briefly.
  5. Serve warm over prepared mashed potatoes.
