  • 5 strips bacon
  • 4 cups chicken broth
  • 1 lb. boneless/skinless chicken breast
  • 1 lb. Yukon gold potatoes, diced
  • 1 (15 oz.) can sweet kernel corn, drained
  • 2 cups half and half
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1-2 jalapeno peppers, diced
  • Salt
  • Pepper
  • Oregano
  • Paprika
  • Mustard powder
  • Chili powder
  • Cumin

Instructions

  1. Cook the bacon in a large soup pot over low heat until crispy; set aside.
  2. In the same pot with some bacon drippings left behind, sauté onion for about three minutes until softened.
  3. Add butter and diced peppers; sauté for another three minutes.
  4. Stir in flour and cook for two minutes until lightly browned.
  5. Gradually add chicken broth and half-and-half while stirring continuously; include a bay leaf.
  6. Season chicken breasts with salt and pepper; add to the pot and simmer uncovered for about 15–20 minutes until cooked through.
  7. Remove chicken, dice it after resting, then return to the chowder along with the potatoes and corn.
  8. Simmer until potatoes are fork-tender (20–25 minutes).
  9. Stir in cheese if desired; garnish with bacon bits and green onions before serving.
