  • 1 cup blueberries
  • 4 large eggs (room temperature)
  • 1/2 cup + 1 tablespoon superfine sugar (divided)
  • 1 1/2 cups flour
  • 1/3 cup + 3 tablespoons melted butter (divided)
  • 1 1/4 cups milk
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat the oven to 180C/350F. Grease a large baking dish with 3 tablespoons of melted butter and add the pitted cherries and blueberries evenly across the bottom.
  2. In a mixing bowl, whisk together eggs and half a cup of superfine sugar until combined. Add flour and mix thoroughly. Then incorporate melted butter and milk until smooth.
  3. Pour the batter over the fruit in your baking dish, ensuring even coverage.
  4. Bake for about 35-40 minutes or until set and golden brown; a skewer inserted into the center should come out clean.
  5. Remove from the oven, sprinkle with remaining sugar, dust with powdered sugar before serving.
