  • 1 cup dry couscous
  • 1 can chickpeas
  • 1½ cups cherry tomatoes
  • 1½ cups cucumber
  • 1 cup yellow bell pepper
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon grated lemon zest
  • 1 teaspoon ground cumin
  • 1 teaspoon grated garlic
  • ¼ teaspoon turmeric (optional)
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 small red onion (finely chopped)
  • ½ cup olives (halved)
  • 4 tablespoons parsley (finely chopped)

Instructions

  1. In a large bowl, combine couscous, lemon zest, ground cumin, grated garlic, turmeric (if using), salt, and black pepper.
  2. Pour boiling water over the mixture and stir. Cover with a plate and let sit for 5–10 minutes.
  3. Fluff couscous with a fork. Add chickpeas, cherry tomatoes, cucumber, yellow bell pepper, red onion, olives, parsley, olive oil, and lemon juice.
  4. Toss until well combined. Adjust seasoning to taste before serving.
