  • 2 tablespoons olive oil
  • 1 medium yellow onion (diced)
  • 3 stalks celery (diced)
  • 4 cloves garlic (minced)
  • 2 lbs ground beef
  • 1 lb Yukon Gold potatoes (cut into 1-inch pieces)
  • 4 carrots (peeled and sliced)
  • 1 can green beans (drained)
  • 3 tablespoons tomato paste
  • 1 can diced tomatoes (with juices)
  • 1 can black-eyed peas (drained and rinsed)
  • 1 can corn (drained)
  • 4-6 cups beef broth
  • Spices: Italian seasoning, smoked paprika, chili powder

Instructions

  1. In a large dutch oven, heat olive oil over medium-high heat. Add onion and celery; sauté for 2–3 minutes until soft. Stir in garlic and cook for an additional minute.
  2. Add ground beef; cook until browned, breaking it apart as it cooks. Incorporate all remaining ingredients along with spices and add 4 cups of beef broth. Adjust broth quantity for desired thickness.
  3. Bring to a boil, then reduce heat to medium-low. Cover and simmer for about 14–16 minutes until potatoes are tender. Adjust seasoning to taste.
  4. Serve hot with your choice of toppings.
