  • 1 cup uncooked wild rice
  • 8 ounces baby bella mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 1 large sweet potato (about 1 pound), peeled and diced
  • 1 small white onion, peeled and diced
  • 1 bay leaf
  • 1.5 tablespoons Old Bay seasoning
  • 14-ounce can unsweetened coconut milk (or cream sauce option)
  • 2 large handfuls of kale, roughly chopped

Instructions

  1. Prepare all vegetables by washing and chopping them into appropriate sizes.
  2. In a large pot over medium heat, add oil if desired and sauté onions and garlic until fragrant (about 3 minutes).
  3. Add carrots and celery; cook for another 5 minutes until softened.
  4. Pour in the vegetable stock with uncooked wild rice, sweet potatoes, and bay leaf. Bring to a boil, then reduce heat to low.
  5. Stir in Old Bay seasoning, cover, and simmer for about 30 minutes or until rice is tender.
  6. Add mushrooms and kale; cook for an additional 10 minutes until kale wilts.
  7. Remove from heat and stir in coconut milk or chosen cream option. Season with salt and pepper to taste before serving hot.
