  • 2 cans (15 oz each) great Northern beans
  • 1 yellow onion
  • 2 cloves garlic
  • 2 cans (4 oz each) diced green chiles
  • 1 can (15 oz) whole kernel corn
  • 4 oz reduced fat cream cheese
  • 1/4 cup half-and-half

Instructions

  1. Place the chicken in the slow cooker and season with salt, pepper, cumin, oregano, chili powder, and cayenne.
  2. Add diced onion, minced garlic, beans, green chiles, corn, chicken broth, and chopped cilantro.
  3. Cook on LOW for 8 hours or HIGH for 3-4 hours until the chicken is tender.
  4. Shred the chicken in a mixing bowl and return it to the slow cooker.
  5. Mix in softened cream cheese and half-and-half until creamy; cook on HIGH for an additional 15 minutes.
  6. Serve hot with desired toppings.
