  • 6 oz small pasta (like shells)
  • 1 cup heavy whipping cream
  • ½ to 1 cup grated Parmesan cheese
  • 2.5 to 3 cups fresh spinach

Instructions

  1. In a large pot, heat the olive oil over medium-high heat and brown the chicken with Italian seasoning, salt, and pepper for about 4–5 minutes.
  2. Add onions, carrots, celery, sundried tomatoes, and garlic; sauté until translucent (3–4 minutes).
  3. Sprinkle in the flour and mix well. If using tomato paste, add it now.
  4. Gradually whisk in chicken broth while stirring to avoid lumps.
  5. Bring to a boil and add pasta along with more seasoning; cover and simmer for about 20 minutes.
  6. Stir in cream, spinach, and Parmesan cheese; simmer for another 5 minutes.
  7. Adjust seasoning as needed before serving.
