  • 23 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 34 garlic cloves, minced
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)

Instructions

  1. Place raw chicken in the bottom of the slow cooker.
  2. Add chopped onion, minced garlic, Italian seasoning, red pepper flakes (if using), and crushed tomatoes on top.
  3. Pour chicken broth over all ingredients.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is cooked through.
  5. Shred the chicken and return it to the pot.
  6. Stir in heavy cream until well combined.
  7. Optionally mix cornstarch with cold water to thicken if desired.
