  • 2 pounds boneless stewing beef (chuck)
  • 1/2 medium onion, chopped
  • 6 cloves garlic, minced
  • 1 pound Yukon Gold potatoes, cut into chunks
  • 4 large carrots, chopped
  • 3 stalks celery, chopped
  • 3 cups beef broth
  • 1 can (6 ounces) tomato paste
  • 1 tablespoon Worcestershire sauce
  • Seasoning: salt, pepper, bay leaves

Instructions

  1. Prepare ingredients by cutting the beef into bite-sized pieces and chopping vegetables.
  2. In a skillet over medium heat, brown the beef in olive oil until it develops a nice crust.
  3. Transfer browned beef to the slow cooker and layer with onions, garlic, potatoes, carrots, and celery.
  4. In a bowl, mix beef broth with tomato paste and Worcestershire sauce; pour over the ingredients in the slow cooker.
  5. Add bay leaves on top; cover and cook on low for 7–8 hours or high for 4–5 hours until tender.
  6. For a thicker stew, stir in a cornstarch slurry during the last 30 minutes of cooking.
  7. Remove bay leaves before serving; season to taste.
