  • 1/2 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 2 medium carrots (sliced)
  • 2 sticks celery (chopped)
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 packages (9 oz each) cheese tortellini
  • 2 cups fresh spinach

Instructions

  1. In a skillet, sauté sausage and onions over medium heat until browned, about 7-8 minutes. Add minced garlic and cook for an additional 30 seconds.
  2. Transfer the sausage mixture to a crockpot. Add carrots, celery, crushed tomatoes, diced tomatoes with juices, and chicken broth.
  3. Cook on low for 7-8 hours or high for 3-4 hours. If cooking on high, chop carrots finely.
  4. About 30 minutes before serving, stir in tortellini, cream (if using), and spinach into the crockpot. Season with salt and pepper to taste.
