  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips, melted and cooled slightly
  • 1 (21-ounce) can cherry pie filling
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • Fresh cherries or maraschino cherries
  • Whipped cream
  • Chocolate shavings

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan. Mix cracker crumbs, sugar, and melted butter; press into the bottom of the pan and bake for 10 minutes.
  2. Beat softened cream cheese until smooth; mix in sugar and cocoa powder. Add eggs one at a time, then sour cream and vanilla extract, followed by melted chocolate chips. Pour over cooled crust.
  3. Bake in a water bath for about 55–60 minutes until edges are set but center remains slightly jiggly. Cool in the oven for an hour; refrigerate for at least 4 hours or overnight.
  4. For ganache: Heat heavy cream until simmering; pour over chocolate chips and stir until smooth. Allow to cool before spreading over chilled cheesecake.
  5. Top with cherry filling, fresh cherries, whipped cream, and chocolate shavings.
