Ingredients

2 cups diced chicken breast
1 tablespoon olive oil
1 red bell pepper, julienned
1 green bell pepper, julienned
1 medium onion, sliced
2 cloves garlic, minced
1 tablespoon ginger, minced
3 tablespoons soy sauce
1 tablespoon hoisin sauce
Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add garlic and ginger, and sauté until fragrant, about 1 minute.
  3. Increase heat to high, add diced chicken, and stir-fry until it starts to brown, about 5 minutes.
  4. Add bell peppers and onion, continuing to stir-fry until vegetables are just tender, about 5 more minutes.
  5. Stir in soy sauce and hoisin sauce, season with salt and pepper, and cook for another 2 minutes.
  6. Remove from heat and serve immediately over cooked rice or noodles.
