  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 2 cups chicken or vegetable broth
  • 1 (14 ounce) can fire-roasted diced tomatoes (with juices)
  • 3 (14 ounce) cans black beans (drained & rinsed)
  • 1 (4 ounce) can diced green chilies (with juices)
  • 1/2 red bell pepper (chopped)
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 tablespoon lime juice
  • salt & pepper (to taste)
  • Toppings (optional): chopped cilantro, sour cream, tortilla strips, avocado, etc. (to taste)

Instructions

  1. Heat olive oil in a soup pot over medium heat. Sauté chopped onion for 5–7 minutes until soft.
  2. Add minced garlic, then pour in broth, diced tomatoes (with juices), black beans, green chilies, red bell pepper, chili powder, smoked paprika, and ground cumin.
  3. Bring to a boil; cover slightly and simmer for 8–10 minutes.
  4. Blend the soup to your desired consistency using an immersion blender or regular blender.
  5. Stir in lime juice; season with salt and pepper to taste.
  6. Serve hot with optional toppings like cilantro, sour cream, tortilla strips, or avocado.
