2 eggs
½ cup honey
2 carrots, shredded
1 cup oats
½ tsp baking soda
1 tbsp cinnamon
¼ cup butter, room temperature
1 tsp vanilla
Instructions
Preheat your oven to 180°C (300°F).
Put all ingredients, except the shredded carrot, into a bowl and blend with an immersion blender. If you don’t have an immersion blender, place the ingredients into a blender and blend until smooth.
Stir in the shredded carrot.
Line a small baking pan with parchment paper (I used 7×7 inches, around 18 cm). Spread the mixture in the pan and bake at 180°C (350°F) for 20-30 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool off, slice, and enjoy!
Notes
This carrot cake is super tasty on its own, but if you’d like to make a super easy frosting, grab some cream cheese, honey, and vanilla, mix together, and spread over the cake once it’s cooled off.
