  • 3 large eggs
  • 1 cup oil
  • 15 oz pumpkin puree
  • 8 oz cream cheese
  • 8 Tbsp unsalted butter
  • 1 cup powdered sugar
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, whisk eggs and oil together; add pumpkin puree and mix until smooth. Combine wet and dry ingredients until just mixed.
  4. Pour batter into a greased 9×13 inch pan and bake for about 35 minutes or until a toothpick comes out clean.
  5. For the frosting, beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla extract; mix until fluffy.
  6. Spread frosting over cooled cake and decorate as desired.
