  • 3/4 cup uncooked rice
  • 1 tablespoon olive oil
  • 1 can (13.5 oz) tomato sauce
  • 1 can (28 oz) fire-roasted diced tomatoes
  • 4 cups chicken broth
  • Italian seasoning

Instructions

  1. Cook rice according to package instructions.
  2. In a large soup pot, heat olive oil over medium heat. Sauté chopped onion for 5–7 minutes until softened.
  3. Add ground beef and cook for about 5 minutes until browned, draining excess grease if necessary.
  4. Stir in minced garlic and sauté for an additional minute.
  5. Add chopped peppers, tomato sauce, diced tomatoes, chicken broth, Italian seasoning, and paprika. Bring to a gentle boil.
  6. Once boiling, reduce heat and simmer for 15 minutes.
  7. Stir in cooked rice and let simmer for another 10 minutes to blend flavors.
