  • 2 Tbsp coconut oil
  • 1 cup onion, finely diced
  • 1/2 tsp salt
  • 4 large garlic cloves, minced
  • 1 tsp ground ginger
  • 1 tsp ground coriander
  • 4-6 Tbsp Thai red curry paste, or to taste
  • 1 can unsweetened coconut milk, full-fat (14-ounce can)
  • 1 Tbsp brown sugar
  • 1 ½ pounds boneless skinless chicken breast, cut into thin strips
  • 1 Tbsp fish sauce
  • 1 cup carrots, shredded or julienned
  • 1 cup red bell pepper, sliced or diced
  • 1 lime, zest and juice
  • 1/4 cup fresh cilantro, chopped and divided

Instructions

  1. Heat coconut oil in a large skillet over medium-high heat. Add diced onions and salt; cook until softened.
  2. Stir in red curry paste, minced garlic, ginger, and coriander; cook until fragrant.
  3. Pour in coconut milk and add brown sugar and fish sauce. Add chicken strips, stir well, and bring to a simmer.
  4. Add shredded carrots and diced peppers; continue simmering until the chicken is cooked through.
  5. Remove from heat; stir in lime zest and half of the lime juice along with half of the cilantro.
  6. Taste and adjust seasoning as needed before serving with remaining cilantro on top.
