  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 3 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1/4 tsp cayenne
  • 2 cans white beans, drained and rinsed
  • 2 lbs chicken breasts, raw (~3 large breasts)
  • 4 cups chicken broth
  • 2 4oz cans green chiles
  • 1 can fire roasted tomatoes
  • 1 can corn, drained and rinsed
  • 1 lime, juiced
  • 1/2 cup Greek yogurt (I used 2%)
  • Cilantro
  • Cheddar cheese
  • Jalapeno slices
  • Lime wedges
  • Tortilla chips

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Sauté diced onion until soft; add minced garlic and cook for another minute.
  2. Mash one cup of white beans in a separate bowl to thicken the chili.
  3. Combine chicken broth, mashed beans, remaining beans, green chiles, fire-roasted tomatoes, corn, and raw chicken breasts in the pot.
  4. Bring to boil; then reduce heat to simmer for 15–20 minutes until chicken is cooked through.
  5. Shred the chicken once cooled; return it to the pot along with lime juice and Greek yogurt.
  6. Stir well and serve hot with desired toppings.
