  • 1 tablespoon ground espresso
  • 1/2 cup + 2 tablespoons light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 1 2/3 cups + 1 tablespoon all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup chopped semi-sweet chocolate or mini chocolate chips

Instructions

  1. Brown the butter in a stainless steel pan over medium heat until amber in color, about 10 minutes.
  2. Stir in the ground espresso and let it cool to room temperature (20–30 minutes).
  3. Mix in light brown sugar and granulated sugar for one minute until combined.
  4. Whisk in the egg, egg yolk, and vanilla extract until smooth.
  5. Fold in flour, baking soda, salt, and chocolate chips until just combined.
  6. Chill dough on a parchment-lined tray for at least 3–4 hours or overnight.
  7. Preheat oven to 350°F (180°C). Bake cookies spaced apart for about 10–12 minutes until edges are golden and centers are puffy.
  8. Let cool on a wire rack before serving.
