  • 1 1/2 pounds organic ground beef
  • 1/4 cup whole milk
  • 1/2 large white onion, minced
  • 2 1/2 large white onions, sliced
  • 4 cloves garlic, pressed
  • 3/4 cup grated Gruyere cheese
  • 1 cup shredded mozzarella
  • 2 tablespoons ghee or butter
  • 1/4 cup sherry
  • Fresh thyme
  • Parsley
  • Herbes de Provence

Instructions

  1. Soak breadcrumbs in milk for five minutes.
  2. In a large bowl, combine soaked breadcrumbs with ground beef, minced onion, garlic, herbs, salt, pepper, Gruyere cheese, and egg; mix gently.
  3. Form mixture into meatballs and chill for 15 minutes.
  4. Heat oil in a skillet; sear meatballs until browned on all sides and set aside.
  5. In the same skillet, caramelize sliced onions until golden brown; add garlic and herbs.
  6. Pour in sherry and beef stock; thicken with flour and simmer.
  7. Nestle meatballs back into the sauce; top with cheeses and broil until melted.
