  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 85 g chocolate chips

  1. Preheat oven to 160ºC (320ºF) fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
  2. Melt dark chocolate and butter together in a heatproof bowl over simmering water; stir until smooth and mix in vanilla.
  3. In another bowl, whisk eggs and sugars until light and fluffy, about 5 minutes.
  4. Sift together flour, cocoa powder, baking powder, and salt; fold into the egg mixture along with melted chocolate.
