  • 12-15 eggs
  • 2 tbsp butter
  • 4 tbsp canola oil
  • 1 pkg refrigerated diced hash brown potatoes
  • 1 large green pepper (seeded & diced)
  • 1 small yellow onion (peeled & diced)
  • 1 cup chopped ham
  • 1 1/2 cup shredded cheddar cheese

Instructions

  1. In a large skillet over medium heat, melt butter. Whisk eggs and cream together until smooth, then pour into the skillet. Cook gently with a spatula until just underdone. Remove and set aside.
  2. Add canola oil to the skillet and heat. Spread hash browns evenly; cook for 5 minutes without stirring. Flip and cook another 5 minutes until golden.
  3. Stir in green pepper, onion, and ham; cook until veggies are tender.
  4. Divide hash brown mixture into bowls and top with scrambled eggs and cheese.
