  • 3 tablespoons olive oil
  • 2 pounds beef chuck, cubed
  • 2 teaspoons kosher salt
  • 2 teaspoons ground black pepper
  • 2 stalks celery, finely sliced
  • 4 medium carrots, peeled and cut into 1-inch pieces
  • 3 medium yellow onions, peeled and cut into 1-inch pieces
  • 3 medium Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons tomato paste
  • 1 (one) 8-ounce can tomato sauce
  • ½ cup shoyu (or low-sodium soy sauce)
  • ½ cup Worcestershire sauce
  • 4 cups low-sodium beef stock, divided
  • Rice (for serving)

Instructions

  1. Pat the beef dry and season with salt and pepper. Dredge in flour.
  2. In a large pot, heat olive oil over medium-high heat. Brown the beef in batches.
  3. Add vegetables, tomato paste, tomato sauce, shoyu, Worcestershire sauce, and 3½ cups beef stock. Stir well.
  4. Bring to a boil, then reduce heat to low and cover. Simmer for 2-3 hours until beef is tender.
  5. Mix remaining stock with flour to create a slurry. Stir into stew to thicken; simmer for an additional few minutes.
  6. Serve over rice and enjoy!
