  • 20 ounces frozen hash browns (thawed)
  • ½ cup white cheddar cheese (shredded)
  • 6 large eggs (lightly beaten)
  • ½ cup heavy cream (or whole milk)
  • 4 rashers bacon (crispy cooked and crumbled)
  • ½ onion (thinly sliced)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425˚F.
  2. Squeeze excess moisture from the thawed hash browns and combine with shredded cheddar cheese, salt, and pepper.
  3. Press the mixture into a greased 9” springform pan to form the crust. Freeze for at least 1 hour.
  4. Par-bake the crust for 15 minutes; cool slightly.
  5. Caramelize sliced onions in butter over medium heat until golden.
  6. In a mixing bowl, whisk together eggs and cream; add caramelized onions, crumbled bacon, and seasonings.
  7. Pour filling into the par-baked crust and bake at 375˚F for about 25-30 minutes until just set.
  8. Allow cooling for 10 minutes before slicing; garnish with fresh chives.
