  • 1 large yellow onion (finely chopped)
  • 5-6 cloves garlic (minced)
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese (shredded)
  • Fresh herbs: parsley, chives, thyme
  • Salt & pepper

Instructions

  1. Peel and cube the potatoes; rinse under cold water.
  2. In a large pot over medium heat, melt butter or oil, then sauté onion until translucent.
  3. Add minced garlic and cook until fragrant.
  4. Stir in flour and cook for 1-2 minutes to form a roux.
  5. Gradually whisk in broth until smooth; bring to a simmer.
  6. Add potatoes, cover, and cook until tender (15-20 minutes).
  7. Blend half of the soup until smooth; return to pot.
  8. Lower heat; stir in milk, cream, herbs, and cheese until melted.
  9. Season with salt and pepper before serving.
