Ingredients

Scale
  • 1 nine-inch unbaked pie crust
  • 2 cups fresh blueberries (do not thaw if using frozen)
  • 1 tablespoon flour
  • 1 cup sugar
  • 1 cup evaporated milk
  • 3 large eggs (slightly beaten)
  • 1 teaspoon vanilla extract
  • A dash of cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C). Prick the bottom and sides of the pie crust with a fork.
  2. Line the crust with parchment paper and fill with raw rice or pie weights. Prebake for 15 minutes, then remove the weights and let cool.
  3. Place blueberries evenly in the cooled crust.
  4. In a mixing bowl, whisk together flour and sugar. Gradually add evaporated milk while whisking until smooth. Mix in eggs, cinnamon, and vanilla until combined.
  5. Pour custard mixture over blueberries and bake at 425°F (220°C) for 15 minutes. Lower temperature to 350°F (175°C) and bake for an additional 35 minutes or until set but slightly jiggly in the center.
  6. Allow pie to cool completely before slicing.
