  • 1 lb ground beef
  • 1/4 cup parmesan cheese
  • 1/4 cup milk
  • 1/2 cup bread crumbs
  • 2 carrots, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 quarts chicken broth
  • 1 bag baby spinach or escarole
  • 1 cup orzo or acini de pepe pasta

Instructions

  1. In a mixing bowl, combine ground beef, parmesan cheese, milk, bread crumbs, garlic powder, salt, and parsley. Roll into small meatballs.
  2. Heat olive oil in a large pot over medium-high heat. Sear meatballs until golden brown and set aside.
  3. Remove excess oil from the pot. Sauté onions for 5 minutes, then add carrots and cook for an additional 3 minutes. Stir in garlic for one minute.
  4. Pour in chicken broth and bay leaves; bring to a boil. Add meatballs back into the pot and let simmer for 15 minutes.
  5. Add pasta; simmer for another 15 minutes until cooked through. Stir in spinach and cover for five minutes before serving hot.
