  • 4 pounds bone-in chicken thighs (or drumsticks)
  • 2 teaspoons chicken bouillon
  • ¼ cup chopped scallions
  • 2 habanero peppers (seeded and minced)
  • 1 large onion (peeled and chopped)
  • 2 large carrots (sliced)
  • 1 bell pepper (seeded and chopped)
  • 3 tablespoons oil
  • 2 tablespoons minced garlic
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 3 tablespoons ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon browning seasoning
  • 2 bay leaves
  • 4 cups water

Instructions

  1. 1. Season the chicken with salt and pepper. Heat oil in a Dutch oven over medium-high heat and brown the chicken on all sides until golden.
  2. 2. Remove the chicken and sauté onions, carrots, bell pepper, scallions, garlic, habanero peppers, thyme, ginger, paprika, black pepper, ketchup, brown sugar, browning seasoning, and bay leaves in the same pot until vegetables soften.
  3. 3. Return the browned chicken to the pot. Add water and mix well. Bring to a boil.
  4. 4. Lower the heat to simmer; cover and cook for about 50 minutes or until the chicken is tender.
  5. 5. Adjust seasonings as needed before serving over rice or with your favorite sides.
