  • 1 tbsp Kashmiri/Himalayan green tea
  • 1/2 tsp baking soda
  • 1 star anise
  • 4 crushed cardamom pods
  • 1 cinnamon stick
  • 1/4 tsp Himalayan salt
  • 1 cup whole milk
  • Sugar or honey to taste

Instructions

  1. Boil water in a saucepan, then add the green tea leaves and let it simmer for about 5 minutes.
  2. Stir in baking soda; the color will deepen to red. Boil for another 2 minutes.
  3. Add star anise, crushed cardamom, and cinnamon; boil for an additional minute.
  4. Reduce heat and simmer for 20–30 minutes until reduced by half.
  5. Mix in salt, then pour in whole milk and bring to a low boil while stirring continuously until the chai turns pink.
  6. Strain into cups, sweeten as desired, and enjoy hot or chilled over ice.
