Mafe, also known as Maafe, is a traditional Senegalese peanut stew that combines rich flavors in a creamy, spicy sauce.   • 2 lbs stew beef
  • 1/2 cup peanut butter
  • 1 red bell pepper
  • 2 tbsp tomato paste
  • 1 onion
  • 1 tbsp beef bouillon powder
  • 1 tsp cayenne pepper
  • 1/4 cup olive oil
  • Salt and black pepper to taste
  • 1 cup water
  • 2 cups stock/broth

Instructions

  1. Prepare the beef by washing and cutting it into smaller pieces for even cooking.
  2. Heat olive oil in a stovetop pan over medium heat. Sauté beef with black pepper and a pinch of salt for about 8-10 minutes until browned.
  3. Add finely chopped onion and red bell pepper; sauté for an additional 3 minutes until softened.
  4. Stir in tomato paste and cook for about 5 minutes to enhance flavor.
  5. Mix in water, stock, bouillon powder, cayenne pepper, and salt; bring to a boil and then simmer for an additional 5 minutes.
  6. Blend in the peanut butter until fully incorporated.
  7. Cook until the stew thickens (about 2-5 minutes), stirring occasionally.
  8. Serve hot with cauliflower rice or your preferred side.
