  • 1 tablespoon gelatin powder
  • 400 g mango chunks (about 3 medium mangoes)
  • 350 g whipping cream
  • 30 g powdered sugar
  • 1 teaspoon vanilla extract
  • 40 ladyfinger biscuits
  • 300 g additional whipped cream
  • 200 g more mango chunks (about 1 medium mango)

Instructions

  1. Sprinkle gelatin over cold water in a small bowl; let bloom for 5 minutes and dissolve gently without boiling.
  2. Blend 400 g of mango chunks until smooth; combine with dissolved gelatin.
  3. Whip cream with powdered sugar and vanilla until stiff peaks form; fold in mango puree.
  4. Line a springform pan with ladyfingers; pour half of the mousse, add another layer of ladyfingers, then top with remaining mousse.
  5. Chill for at least 4 hours or overnight.
  6. Spread additional whipped cream on top and garnish with remaining mango chunks before serving.
