  • 3/4 cup sun-dried tomatoes (plus 1 tbsp oil)
  • 8 ounces mushrooms (thinly sliced)
  • 1 tablespoon minced garlic
  • 1/4 cup all-purpose flour
  • 1 tablespoon Italian seasoning
  • 1-1/4 cup whole milk
  • 1 cup chicken broth
  • 7/8 cup grated Parmesan cheese (divided)
  • 9 ounces refrigerated tortellini
  • 1-1/2 cups shredded rotisserie chicken
  • 2 cups fresh baby spinach (coarsely chopped)

Instructions

  1. Preheat the oven to 425°F.
  2. In a large oven-safe pan, heat oil from the sun-dried tomatoes over medium-high heat. Sauté sliced mushrooms for 2–3 minutes until tender, then add sun-dried tomatoes and garlic; cook for another 3 minutes. Transfer to a plate.
  3. In the same pan, melt remaining butter and whisk in flour until smooth. Gradually add milk and chicken broth while whisking until thickened (3–5 minutes). Stir in Parmesan cheese until melted.
  4. Return vegetables to the pan and add chicken, tortellini, and spinach; stir gently.
  5. Bake for 8 minutes, stir, then sprinkle remaining cheese on top and bake for an additional 3 minutes.
  6. Serve immediately.
